This is a new recipe that we tried today...Tony and I were cooking maniacs this morning!

 

 

BOUNTIFUL BRUNCH PIZZA

 

CRUST

1 package (24 oz) frozen, shredded hash brown patties, thawed and broken apart (I used shredded hash browns, not patties)

1 egg, beaten

Salt and pepper to taste

 

EGG TOPPING

7 eggs

1/2 cup milk

Salt and pepper to taste

1 cup chopped ham

1/2 cup sliced fresh mushrooms

1/4 cup green onion slices

1/4 cup chopped green bell pepper

1 1/2 cups shredded cheddar cheese

 

Preheat oven to 400*...

 

Use parchment paper on round pizza pan for easier clean up

 

Combine egg, potatoes, and salt and pepper...mix well

 

Spread potato mixture on pan...pat down with back of spoon into a round pizza shape

 

Bake for 20 minutes...remove from oven

 

Combine eggs and milk, salt and pepper...microwave for three minutes...stir...microwave for an additional three minutes

 

Spread cooked egg mixture over potatoes...top with ham, mushrooms, green onion, green pepper...Sprinkle with cheese

 

Return to oven for ten minutes...

 

This is pretty big...so you might want to save it for a group...

 

The next time I make it...I'm going to add about a 1/2 cup sour cream to the potatoes and add a can of green chilies to the topping...

QB, that looks GREAT! Oh and love the cookware We cooked using some of that today, too.

 

 

 

I just had a Pampered Chef party...sold over $1000...the freebies are glorious!!!

 

Tony's cooking a roast right now...playing with all my cool toys...I'll post a picture and recipe later if it's good...

Poppy Seed Chicken

 

8 oz sour cream

4-6 chicken breasts

1 can cream chicken soup

3/4 cup melted butter

1 roll Ritz crackers

2 tbsp poppy seeds

 

Stir sour cream and soup together.

Layer chicken then soup--Repeat. (to save time I just mix it all together--either way is fine!)

 

--Topping--

Crush the roll of Ritz crackers and add 3/4 cup melted butter.

 

Add 2 tbsp poppy seeds.

 

Bake 30 mins @ 350 or until bubbly

    • Hey Spike, I’m still confused that Oneida already named a head coach in waiting after Coach May steps down this year.  That’s not a knock on the new coach, he may turn out to be ok, but you would think that job would be advertised and interviews conducted.  I would think some quality applicants for sure for the job, including an assistant right off I-75 down the road from you guys.  I’m not trying to start drama either, I don’t have a dog in the hunt, but it seems peculiar about that move.  Hope it works out for Oneida, maybe the leadership knows more.  Good luck to the Indians in 2025.  
    • Yes, by all accounts, this game should be over quickly but I would say this game means a hundred times more to the Gate City players  then it does to the DB players.Years  ago when Greeneville had DB on their schedule , it was  Just another little local team for DB that they dominated but for Greeneville it was circled ⭕️ on the schedule.  Same thing when a Greene county team plays Greeneville. Bottom line for the DB players is they better go into it ready to be hit hard and often just like I told the DB boys when they went for a scrimmage at Greeneville a few years ago. Jump on Gate City fast but expect them to play tough until the end.        
    • How did Walker valley do last Thursday on there 7v7 anyone know ?
