Whats your favorite soup

What is your favorite soup. As a child for me it was Tomato soup out of the can. But having married a home ec. major who is country trained as well, I have several home made favorites. Broccoli and cheese soup, chicken and wild rice, and some of the finest potato soup this side of the Tennessee river. Any other soups or recipes out there. A fool for soup. :angry:

I am always hungry for a Good French Onion Soup also.

What is really in oxtail soup?

This is one instance where the word is self-explanatory, it is Ox-Tail. I don't know the history but I'm sure it became popular when nobody could afford not to eat all of an animal.

 

My home town (Bury) which is a suburb of Manchester is famour for Black Puddings, which is basically a sausage made out of congealed Pigs Blood. I'm glad to say I never developed a taste for it.

Here's my recipe for Broccoli Cheese Soup...takes a bit of doing...but it's really good...

 

1 pound Velveeta Cheese

1 1/2 pounds broccoli (can use frozen, fresh is best)

2 cups water

1 stalk of celery, diced

1 onion, diced

2 tablespoons butter

2 tablespoons flour

2 1/2 cups water

3/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup heavy whipping cream

1 tablespoon instant chicken bouillon

 

Cut broccoli into 1 inch pieces. Heat 2 cups water to boiling in 3 quart saucepan. Add broccoli, onion and celery. Cover and heat to boiling. Boil until tender, about 10 minutes. Put into blender and blend until of uniform consistency.

 

Heat butter in 3 quart saucepan over low heat until melted. Stir in flour. Cook, stirring constantly, until mixture is smooth and bubbly, remove from heat. Stir in 2 1/2 cups water. Heat to boiling, stirring constantly. Boil and stir one minute.

 

Stir in broccoli mixture, bouillon, salt and pepper. Heat just to boiling. Stir in whipping cream. Heat until hot, do not boil.

 

Add Velveeta. Keep stirring slowly until cheese is melted.

 

Good stuff...after the first time you make it...it gets easier...

Here's an easy French Onion Soup...

 

Soup

4 large onions, thinly sliced

1/4 cup butter or margarine

2 teaspoons sugar

1/4 cup all purpose flour

1/2 teaspoon salt

8 cups beef broth

 

Topping

8 1-inch thick French bread slices

1 cup shredded mozzarella cheese

 

Preheat oven to 400 degrees.

Melt butter over medium heat in dutch oven. Add onions and sugar. Cook and stir for 15 minutes, until onions are tender and golden brown. Stir in flour and salt. Gradually add beef broth, bring to a boil over medium-high heat, stirring frequently. Add salt and pepper to taste. Cover, reduce heat and simmer for 10 minutes.

 

Place bread slices with cheese sprinkled on top..bake until cheese is lightly browned and melted.

 

Put soup into bowls and top with bread.

This potato soup is really good...and if you want it loaded...just add the "loads"

 

4-5 potatoes, cut into cubes

1 large onion, chopped

3 chicken boullion cubes

2 cans Cream of Celery soup

1 cup of milk

3 tablespoons butter

8 ounces sour cream

 

Cover potatoes with water and cook until tender. Add onion and boullion cubes. Add soup, milk and butter. Stir until butter is melted. Add sour cream. Salt and pepper to taste. Simmer about 15 minutes.

    • Hey Spike, I’m still confused that Oneida already named a head coach in waiting after Coach May steps down this year.  That’s not a knock on the new coach, he may turn out to be ok, but you would think that job would be advertised and interviews conducted.  I would think some quality applicants for sure for the job, including an assistant right off I-75 down the road from you guys.  I’m not trying to start drama either, I don’t have a dog in the hunt, but it seems peculiar about that move.  Hope it works out for Oneida, maybe the leadership knows more.  Good luck to the Indians in 2025.  
    • Yes, by all accounts, this game should be over quickly but I would say this game means a hundred times more to the Gate City players  then it does to the DB players.Years  ago when Greeneville had DB on their schedule , it was  Just another little local team for DB that they dominated but for Greeneville it was circled ⭕️ on the schedule.  Same thing when a Greene county team plays Greeneville. Bottom line for the DB players is they better go into it ready to be hit hard and often just like I told the DB boys when they went for a scrimmage at Greeneville a few years ago. Jump on Gate City fast but expect them to play tough until the end.        
    • How did Walker valley do last Thursday on there 7v7 anyone know ?
